Ingredients
1 ripe banana
1 scoop vanilla whey protein powder
80g oats (blended into flour or left whole)
1 egg
2 tbsp peanut butter
1 tsp baking powder
30g dark chocolate chips
1 tsp vanilla extract
Pinch of salt
Optional extras:
Cinnamon
Extra chocolate chips for topping
Preparation
Preheat oven to 180°C (160°C fan).
In a bowl, mash the banana until smooth.
Add egg, peanut butter, and vanilla extract and mix well.
Stir in protein powder, oats, baking powder, and salt until combined.
Fold in chocolate chips.
Scoop mixture onto a lined baking tray and flatten slightly into cookie shapes.
Bake for 10–12 minutes until lightly golden.
Allow to cool before serving.
